The fertile floor of Waipio Valley has historically been cultivated by Hawaiians for centuries to produce taro. Taro is a traditional Polynesian diet staple, often referred to as the "potato of the humid tropics". A commonly known Hawaiian food made from taro roots is Poi.
Taro requires very wet conditions to grow and is very labor intensive. Waipio Valley is an ideal environment for taro production due to a constant flow of water from the Waipio River. Within the valley, several irrigation ditches have been dug by farmers in order to divert water into taro fields, keeping them completely flooded.
These pictures are of a taro field and farm on the side of the main road in Waipio Valley.
