Cereal box problem using TI-83 Students use mathematics to make predictions on how many boxes they would need to buy to obtain a certain amount of colored pens.  Students then run a simulation experiment using TI-83 graphing calculators.
Rock,Paper,Scissors Discussion would include the possible outcomes, comparison of theoretical data to experimental data--why are there differences?--what does it mean to have a "1 in 3" chance of winning?
Take a Chance Probability Project Some of these worksheets are simply tally sheets for penny tossing, die tossing, and spinner activities.  Students then compare these results to mathematical expectations.
Tootsie Pop Pull Students use mathematical expectations to determine the probability distribution of Tootsie Roll Pop flavors and then compare these to experimental data.
Do you want to Bet? Students run experiments to determine probability distributions within a deck of cards.
Cut-the-knot Probability Page A source for many interactive activities where students compare their theoretical solutions to their simulated solutions and discuss differences.
