Plantation Smokehouse
What did you expect to see inside a smokehouse! Curing meat was
done two ways: 1) salt curing and 2) smoking. The former was done in the
cookhouse and the later, here. Imagine slabs of bacon, hams, fowl, and wild
game hanging from the rafters as the hickory smoke curled up from the fire
pit on the earthen floor.
In what season were hogs and cattle
slaughtered?

Answers:
- livestock were slaughtered when they were the fattest and wild
fowl
when they were the most plentiful--in the fall when the weather became
cool
