Cajun Country: Rice

The New Iberia has the oldest rice mill in Louisiana: the Konriko rice mill was founded in 1912
Rice is sorted by gravity into different sizes. The broken rice is fed to pigs; in Thailand, broken rice is eaten by the locals!
The average per capita consumption of rice in the USA is 25 lbs per year; Hispanics consume 100 lbs, and Cajuns, 50 lbs. The Konriko store sells different kinds of rice --  the wild pecan (tasting only) rice is unique.
