Cajun Country: Crawfish


Crawfish are raised all year long in ponds solely for this purpose or in last-year's cultivated rice fields during the winter as additional income for rice farmers. Baskets are baited with fish to attract the crawfish which and then periodically harvested by hand (above) or by boat (below) -- the metal wheel pushes the boat forward across the field.
